“Acting Local, Going Global” Hospitality And Culinary Showdown 2022

Bearing the theme "Acting Local, Going Global: Cultural Elevation through Innovation,” the School of International Hospitality and Tourism Management held the Hospitality and Culinary Showdown on November 14–28, 2022, participated by students from all SIHTM programs.


The competitions are classified into different categories. The categories that were exclusive to the different classes were Entremetier, Pasta Making, Plated Main Course, Mocktail Mixing, and Filipino Dessert Live Cooking, which were for Professional Culinary Arts students. On the other hand, the infographics making, Japanese Story Telling, European Table Setting, Cocktail Mixing, Floral Centerpiece Arrangement, Fruit and Vegetable Carving, and Catering Package were for International Hotel and Business Operations students. The AACACO students competed in the Pampanga Culinary Challenge and on-the-spot cake decorating. The napkin-folding category was open to Tourism students. Due to limitations brought on by health restrictions, some of the product development, European Table Setting, Infographics Making, and Japanese Story Telling competitions were conducted virtually.


The student participants had the opportunity to engage in an interactive discussion with the judges, who are distinguished professionals in their respective fields and entrepreneurs themselves. The judges were generous to share their knowledge and expertise with the students during the competition.


Finally, to recognize the winners, the awarding ceremony was held on November 28, 2022, at the Centennial Hall, where winners were awarded medals and certificates. Truly that after a year and a half of online classes, many students were more than ready to finally join and compete in one of the most anticipated events organized exclusively for SIHTM students.


The Young Innovative Chefs, Organization of Student Patissiers, Front Liners Club, and MICE classes facilitated the conduct of the Hospitality and Culinary Showdown under the supervision of Chef Robenson Dasalla and the rest of the mentors of the champions.
