On November 19, 2022, the students and faculty members of the School of International Hospitality and Tourism Management were brought together to attend the very first Service in the Sky seminar-workshop to discover what it means to provide an excellent in-flight food service. The event was organized for the 4th year BSTM-IT students as part of their subject TMELC 105 (Food and Beverage Services with Inflight Catering).
The event started with a doxology, singing of the Philippine National Anthem and UB Hymn, and presentation of SIHTM Highlights. To formally welcome the attendees, Mr. Alexander Molintas, one of the culinary instructors, shared an inspirational message. After which, Ms. Joanna Marie Victorio, the program chair for BSTM-IT, introduced the speakers. The students were lucky enough to be in the presence of speakers from the PTC Aviation Training center, Mrs. Monique V. Calo and Mr. Derrick H. Dumaya.
The first speaker, Mrs. Calo, started with an interactive activity where students were asked to state their names and a word to describe themselves. With that engaging ice breaker, the seminar began. The discussions that took place were about all the basic equipment that can be found in the galley and their purpose — such as serving utensils, amenities, parts of the cart/trolley, and the delivery and loading of the catering items aboard the flight. Other topics discussed were the types of meal services provided — first class, business class, and economy class, including the process of providing inflight service in an aircraft. This includes welcoming drinks, coffee, cocktails, orders, the tray table set-up, etc. After showing the demonstrations of how to properly serve and hold the carts, trays, and the proper way to serve the coffee and tea, students were encouraged to do a return demonstration to apply what they have learned. Another highlight of the seminar – workshop was the pre-flight safety demonstration. After showing the students the procedure, with the assistance and guidance of Mr. Dumaya, some students and faculty members who attended the event, did a return demonstration. From talks to demonstrations, there was no limit to the lessons learned.
The seminar-workshop was formally closed by the TMELC1 105 instructor, Mr. Mark Anthony Santos. Overall, the day was well spent and the ‘Service in the sky’ seminar-workshop was a success.
